Caponata is a traditional Sicilian dish made with juicy black eggplants, crunchy celery, sweet and tangy onion, tomatoes, Pantelleria capers, and raisins. What are Pantelleria capers? They are dark green flower buds of the caper bush from the island of Pantelleria which are regarded worldwide as the very best. Capers add a salty and aromatic touch to the dish.
